First of all, I know Shepherd's Pie is more British than Irish, also this is technically Cottage Pie because it's made with beef, but I decided it's Irish-ish because there's Guinness in the cheese sauce!

I encourage you to make it your own! Use whatever veg you like in the Shepherd's Pie beef mixture and make that cheese as spicy as you'd like!
